Strawberry Jam Bars

After making some strawberry jam, I decided it was time to make some strawberry jam bars. I first made them several years ago when the annual college festival (the Dew Drop Bop) at my undergraduate institution. I was really involved with our programming board and my senior year we themed it the Katie Kounty Fair! It made me think about all of the great things folks make for county fairs and somewhere I came across Strawberry Jam Bars. Now, having made strawberry jam recently, it seemed like it was time to make the recipe again. I used the strawberry balsamic jam from this post and they tasted delicious. I think these bars are delicious either way and prefer them a day after making them so they have time to get a bit drier, but that’s my taste preference. Strawberry Jam Bars

½ c butter/margarine
½ c brown sugar
1 egg
1 pkg white cake mix
1 c crushed corn flakes
1 c strawberry jam/preserves

In a mixing bowl, cream butter and brown sugar until smooth. Add egg; mix well. Gradually add dry cake mix and cornflakes. Set aside 1 c for topping. Press remaining dough in a greased 9×13 baking pan. Carefully spread jam over crust. Sprinkle with reserved dough. Gently press down. Bake at 350 for 30 minutes or until golden brown. Cool completely on a wire rack. Cut into bars.
