Vegetable Tortilla Soup

Last week the ground froze, so grabbing all that we could from the gardens became essential.  And, over the weekend, it was time to incorporate these into a little dinner.

Vegetable Tortillal Soup

Vegetable Tortilla Soup

8 c chicken broth
2 c fresh red salsa
2 c green salsa (from a jar)
3 c carrots, sliced
1 red onion, diced
1 green bell pepper, diced
large handful cilantro
2 Tbsp lime juice
1 tsp black pepper
1 tsp chili powder
1 sprig fresh oregano
1/2 head cabbage, sliced
1 can refried beans

Put all ingredients in a pot and simmer on low for an hour.

I used my immersion blender at the end to thicken the soup some.  I froze a lot of it, but I will likely add some chicken when I unfreeze.  It would be really easy to make this vegetarian by using vegetable broth and black beans instead of chicken broth and refried beans.
