Wild Rice Stuffing

Over the weekend we had our staff holiday party and like I have the past few years, I brought my wild rice stuffing.  I made a few updates to the recipe since the last time I posted, and I took a better photo, so I’m happy to post that here.  And, this is a Cooking Light recipe, so that also helps as we enter into the holiday season.

Wild Rice Stuffing

Cooking spray
1 1/2 c chopped celery
1 c chopped red onion
2 cloves chopped garlic
1 c wild rice
4 c chicken broth (or vegetable broth)
1 1/2 Tbsp fresh sage
1 c brown rice
1/2 c dried cherries
1/2 c dried apricots
1/3 c dried cranberries
1/2 c toasted chopped pecans
1/2 tsp salt
1/2 tsp pepper

Coat a large skillet with cooking spray.  Add celery, onion, garlic, and wild rice and saute for 3-5 minutes.  Add broth and bring to a boil.  Reduce heat, cover, and simmer for 20-25 minutes.  Add sage and brown rice, return to a boil.  Reduce heat, cover, and simmer for 30-45 minutes or until broth is absorbed.  Remove from heat and let stand for 10 minutes.  Stir in remaining ingredients and serve warm.
