I was walking through one of my new favorite grocery stores — Lucky’s Market — when I saw the big bin that used to hold dates…but it was empty. I thought it would be fun to make some bacon-wrapped dates in celebration of finishing up my doctoral work. One of our usual haunts in Fort Collins — Cafe Vino — introduced me to this delicacy and I couldn’t wait to make them for my family as part of our celebration. So, I searched around the internet to find some recipes and ended up incorporating about four different recipes as I finalized a recipe with the ingredients I was able to find. Luckily, Lucky’s had some pre-packaged Large Medjool Dates and some honey goat cheese, so I knew I was in luck.
Bacon Wrapped Dates
Package of large dates, pitted
1 small log goat cheese
Remove pits from date, if needed and slice partially open. Fill center with goat cheese (about 1 tsp). Wrap date with 1/3 to 1/2 a slice of bacon and use a toothpick to hold in place.
Bake at 375 for 20-30 minutes, until the bacon has reached your desired level of crispy. Remove from oven and drizzle with honey. Once cooled, serve on a platter.
