Southwest Oven Omelet

In looking through the Catholic Daughters Cookbook, I found a few other recipes I was excited to try and decided to make them.  The first was for an oven omelet — similar to a frittata, egg bake, or other items.

Southwest Oven Omelet

1 4.5 oz green chiles
2 3.9 jars mushrooms
16 oz grated Monterrey Jack cheese
1 lb diced ham
1 12 oz can evaporated milk
8 eggs

Preheat oven to 300 degrees.  Grease a 9×13 pan.  Mix cheese, chiles, mushrooms, and ham.  Spread throughout the bottom of the pan.  Whisk together milk, flour, and eggs.  Pour over cheese mixture and bake 1 hour.
