Slaw Breakfast Scramble

After last week’s dinner, I had a lot of the slaw leftover, so I decided to incorporate it into my breakfast.  Adding some eggs and a little bit of cheese, the slaw cooked down and added some great vegetables to my morning!

Slaw Breakfast Scramble

3/4 c slaw
3 eggs
1/4 c cheese
seasoning salt

Heat skillet and add slaw to skillet, allowing it to warm up and start to sweeten.  While this is warming, beat eggs and seasoning salt together.  Add to skillet.  Add cheese and cook as you would scrambled eggs, stirring the eggs around with some frequency as they cook.  Cook until the eggs are cooked through.
