A few weeks ago the family joined together because my sister and her family were visiting from Ohio. It was the oldest nephew’s birthday — he turned 5 years old — and he picked the menu for much of the weekend.
One of the items we ate was from my mom’s recipe collection. I didn’t quite get where the recipe came from, but it was this great Taco Pasta Salad. The recipe seems great for a potluck, picnic, or as a side during these hot summer months.
Taco Pasta Salad
12 oz rotini noodles, cooked and cooled
1 1/2 lb hamburger
1 packet taco seasoning
3/4 c water
1 large tomato, diced
1 large green pepper, diced
1 medium onion, diced
1 small can sliced black olives
2 c Western dressing
2 c shredded Taco-flavored cheese
1 small side bag Doritos, crushed
1/2 c salsa
Cook noodles until tender, drain, rinse in cold water. Set aside to cool completely. Brown the hamburger till no longer pink, drain well. Add taco seasoning packet and water, cook till water is absorbed and mixture is thick. Cool hamburger. When hamburger and noodles are cooled, put in large bowl and add tomato, green pepper, onion and black olives, toss together. Pour dressing over all and toss to combine, stir in cheese. Refrigerate for 2 hours before serving. Pour salsa over top and add crushed doritos on top of all.
