Mustard-Glazed Pork Loin

One night shortly before school started, I was excited to use the grill a few more times and found pork loins on sale at the grocery store.  I found this simple recipe in the Fannie Farmer Cookbook and with a single modification, was able to make it at home.  I forced a friend to eat some and was much more pleased with this than how the last pork tenderloin I made on the grill turned out.  I would definitely make this recipe again.

Mustard-Glazed Pork Loin

1/2 c orange marmalade*
1/2 c prepared mustard
1 Tbsp grated fresh ginger
1 Tbsp soy sauce
1/4 tsp salt
1/4 tsp pepper
3 1/2-4 lb boneless pork loin

Combine the marmalade, mustard, ginger, soy sauce, salt, and pepper and blend well.  Light the grill and prepare for indirect heat.  Cook for 45 minutes, then turn the roast over.  Cook covered for another 45 minutes, brushing with the orange mixture every 10 minutes. Total cooking time will take about 1 1/2 hours, or until an internal temperature of 160 degrees.  Let sit for 10 minutes before carving into thin slices.

*I didn’t have orange marmalade. Instead, I used rhubarb ginger jam.
